What is the story with the Carbon Cub interior panel fasteners? They appear to be a plastic 2 piece rivet...How do you get them apart?
There is an inner and an outer, yes. Its essentially a friction fit molly-tog, the inner simply has to be pulled on with enough force to remove it. There are tools available to do this. Search "interior panel removal tool" on google and you'll see them. Here's an image search of the same:

Rather than buy them I usually modify an unused credit card or hotel key card...or use one of the plastic spatulas/squeegees that are used for mixing epoxy/fiberglass and the like, and cut a notch in it...
To re-fasten you put the outer in first, into the two pieces you are binding. Then insert the inner and push in with thumb/finger to spread out the outer piece and create the binding action that holds it all together.

Similar detail should be in the next rev of the AMM as well, if it hasn't been added already.
